Procedure

Mash grains at 152F.

Add water to make 7 gallons pre-boil

Bring to boil

Add LME

Add bittering hops

Boil 30 minutes

Add 1oz centennial

Boil another 30 minutes

At flame out add 1ox centennial

Cool; pitch 1000ml starter of California Ale yeast at 72F

Ferment 2weeks

Rack to secondary and add 2oz Cascade

Kegged after five days (too early).

 

 

Fermentation
Primary: 14 days @ 68° F
Secondary: 5 days @ 68° F
